					<description>Poke salad.  I only ever had it in Arkansas, made by my grandmother and great-grandmother.  You parboil pokeweed (apparently it's naturally poisonous) and you're left with a thick pile of limp, green leafs not unlike spinach in appearance.  To me, poke salad always tasted like the earth itself.  There's just no other food like it, not spinach, not collard greens.  I can get the taste of if ... a bit like asparagus, but with a certain warm bitterness that rests in your throat.  Swaller' it down with some sweet tea, and go back for seconds!  Better yet, top it off with homemade vanilla ice cream, in all of it's runny glory!</description>
